  • Add a small quarter cup of mesquite wood chips to your smoker’s smokebox

  • Turn the temperature to 225°F and let the smoke start accumulating

  • Once it’s really smoking, add your raw steaks to the smoker and smoke for 10 minutes

  • Finish steaks on a hot grill, or continue to smoke until your desired internal temperature
